Ginger Cookies by Brenda Khaw

50g GINGEN instant ginger powder (10 sachets in a box)
250g Butter
480g Self Raising flour
150g Suger
2 eggs

1. Cream butter and sugar till pale and fluffy.
2. Add in eggs, one at a time.
3. Mix GINGEN instant ginger powder into self-raising flour and fold flour into egg batter in 3 batches.
4. Shaped and bake at 150 degree C for 25 mins or till golden brown.
