Treasure Boxes by Rontree Chan



Ingredients
8 pieces of Tau Kwa trimmed to 5.5cm x 5.5cm square x 3cm height
(pan fried all surfaces to golden brown. use a small knife to cut out a square hole leaving 6-8mm edges)

Preparing the sauce: 
Mix 100ml CP clear chicken broth concentrate with 100ml water, 1/2 tsp sugar, 1/2 tsp oyster sauce and 1 tsp of corn flour.
cook till it combined well.

Treasure box 1:
Mix 1 egg white, 2 Tbsp milk, 2 Tbsp CP clear chicken broth concentrate, 1 Tbsp of small raw white fish pieces and a little pepper. Heat a pan with 1 Tbsp oil. In low heat, cook the mixture till it is done. Dish out set aside.

Mix 1/2 egg yolk with 1 tsp of finely chopped carrot and 1 Tbsp CP clear chicken broth concentrate. Cook in a pan with little oil till cooked.

Method : scoop a amount of cooked egg white mixture into the tau kwa box, and topped with a small dollop of cooked carrot.

Treasure box 2:
Blanch 1 shiitake mushroom and a portion of water spinach (bayam) in salt water till it cooked.

Method : trim the mushroom and stuff into the tau kwa box together with the bayam. pour a tbsp of prepared sauce to serve.

Treasure box 3:
Cut a piece of salmon and fit into the tau kwa box. bake in oven 180 degree for 12 mins. Topped with a small dollop of wasabi mayo ( mix 1 tbsp of mayo, a small amount of wasabi and a few drops of lemon juice) to serve.

Treasure box 4:
Mix 1 egg yolk with 2 Tbsp CP clear chicken broth concentrate. Pour the yolk mixture into tau kwa box. Make sure there is not leakage. top with a small slice of chinese sausage (lup cheong). Bake in oven 180 degree for 12-15mins. Remove from oven, garnish with a small slice of cherry tomato and a small basil leaf to serve.

Treasure box 5:
Cut 1 piece of round king oyster mushroom about 1.5 cm thick. On one surface, cut a few slits on it. Season it with salt and pepper. Pan fry it with butter till it is cooked. Fill the tau kwa box with some cooked bayam and stuff in the cooked king oyster mushroom. pour a tbsp of prepared sauce to serve.

Treasure box 6: 
Cut a piece of Cod fish and fit into the tau kwa box. bake in oven 180 degree for 12 mins. Topped with a small dollop of ginger puree and some finely cut spring onion to serve.

Treasure box 7:
Blanch a small amount of Broccoli with salt and sugar. Trim and stuff into tau kwa box. pour 1 tbsp of prepared sauce to serve.

Treasure box 8:
Blanch a de-vein prawn in salt water. scoop a small amount of egg white mixture from treasure box 1 into one tau kwa box. curl and stuff in the cooked prawn, top with one cooked pea. pour 1 tbsp of prepared sauce to serve


Arrange the treasure boxes on serving plate and pour in the prepared sauce to serve.
