Mee Goreng by Rontree Chan



Mee Goreng Recipe for 2pax

~ 2 TBsp minced garlic
~ 1/3 Onion cut to strips
~ 1/2 bowl cabbage cut to strips
~ 1/2 tomato diced
~ 4 prawns split to half
~ 1 small squid slice to rings
~ 1 small potato diced
~ 1/2 tau kwa diced
~ 1/2 bowl tau geh
~ some chye sim
~ yellow noodle mix with bee hoon if u like.
~ 2 eggs
~ cucumber for garnish
~ 2 TBsp (nasi lemak) Sambal chilli
~ 4 1/2 TBsp ketchup with 2 TBsp water ( I used Happy Family brand ketchup)
~ 150ml water
~ 2 TBsp light soy sauce
~ 3 tsp sugar.

Method
1) air fried or pan fried potato and tau kwa till cooked.
2) soak bee boon in cold water for 1/2 hour if use bee hoon.
3) In a medium heat wok add 2 Tbsp oil. Add minced garlic cook till fragrant.
4) Add in sotong and prawn stir fry for 30 sec.
5) Add onion, cabbage, tomatoes stir fry for 1 min. Then add in cooked potato and tau kwa.
6) Add in noodle and bee hoon, together with 100-150ml water.
7) Add in 2 Tbsp light soy sauce stir fry for 1-2 mins.
8) Add in sambal chilli, ketchup and 3 tsp sugar, stir fry for 30 sec or well mixed.
9) push mee aside, add 1 Tbsp oil and stir fry the egg till almost cook. Mix with the noodle. Check the taste, adjust with water, salt or sugar as different sambal chilli may resulting taste differ.
10) Add in tau geh and chye sim and cont to stir fry for 2-3mins. Dish out and garnish with cucumber and ketchup.
