Braised pork belly with peanut by Rontree Chan



Ingredients

~ 200g of Pork belly ( 五花肉/三层肉) diced
~ 3 Star anise
~ 2 Tbsp fried minced shallot
~ 1 Tbsp fried minced garlic
~ 5 Tbsp of raw washed peanut with skin on
~ 1/3 Tsp 5 spices powder
~ 1 tsp white pepper powder
~ 3-4 Tbsp light soy sauce
~ 1 Tbsp dark soy sauce
~ 1 knob rock sugar
~ ½ tsp salt
~ 2 1/2 bowls water

Method

1) In a pot (medium heat) without oil, put in pork belly, star anise, 5 spices powder, white pepper. Cook for around 5 mins.
2) put in fried minced shallot, fried minced garlic, light and dark soy sauce, peanuts and rock sugar. Cook for 2 mins.
3) pour in water (enough to cover the pork) and salt. Boil for 2-3mins. Test the taste and do adjustment by adding dark soy sauce/sugar/salt.
4) turn to low heat and cover with lid, let it simmer for 1 hour.

Stir Fried Taiwanese Bee Hoon (肉燥米粉炒)

Ingredients

~ Taiwanese Bee Hoon or any thin bee hoon. (3-4 servings)
soak in tap water for 2-3mins. If using normal bee hoon place in boiling water for 30sec to 1 min. remove and set aside.
~ 1 bowl of cabbage cut in strip
~ ½ White Onion cut in strip
~ 1 Tbsp minced garlic
~ 1 Tbsp light soy sauce
~ 1 Tbsp oyster sauce
~ 1 tsp sugar
~ 2-3 ladles of braised pork belly (in another recipe)
~ ½ bowl hot water

Method

1) in a pan, with some oil to fry the minced garlic till fragrant. Add in onion and cabbage, cook till lightly soften.
2) Add in soy sauce, oyster sauce, sugar and braised pork belly with gravy.
3) Add in bee hoon and toss with chop stick. ( You can snip the bee hoon with scissors if it is too long. Toss and stir fry till the bee hoon is well coloured.)
4) add in hot water gradually if the bee hoon is too fry.
5) Test its taste and adjust with salt to personal preference.
6) to serve, top the bee hoon with extra braised pork belly and peanut.
