Fried Chicken by Jumi Tan


To make this: (Serve 5 person)
1. Thaw your 5 chicken thigh. Wash with clean water, drain.
2. Use a pre-mix crispy fried chicken powder. Ingredient inside are: salt, pepper, garlic powder and spices. Rub into chicken thigh.
3. Once done, place chicken thigh into zip-lock bag over-night.
4. The next day, get a large bowl, in there, place in flour, salt, pepper, turmeric powder and five spice powder. Mix well.
5. Coat chicken thigh with powder, shake off excess powder.
6. Make sure your oil is very hot in the pan, place in 2 pieces of chicken thigh at a time. Reduce the fire to medium heat after a while. This first stage of frying should take abt 10-12 mins.
7. Once U see the outside is SLIGHTLY golden brown, get them out and drain off the oil.
8. We need to refried them the second time later to get the outer chicken skin to be more crispy. This time, we are aiming for a slightly darker golden brown. This will take prolly 3 mins only. Once done, drain and serve.
P/S: I did not do a egg wash and also add corn starch to my chicken. So my end result is not the KFC crispy outsider skin texture but more like the ORIGINAL KFC version.
