Goreng Mee Siam by Jeannie Lee

Ingredients

Half packet of bee hoon - soak till soften
4 pcs of fried bean curd - cut into pieces
10 pcs prawns - shelled n deceived
Half bowl of bean sprouts
4 stalks Chinese chives - cut about one inch length
2 eggs beaten - omelette
2 eggs - boil for hard boiled egg - optional
Lime

Method

Soak the bee hoon in warm water till soften, drain n set aside.
Fry beaten eggs and cut into strips. Set aside.
Heat 3tbsp oil, add in premix paste n fry till fragrant. Add in prawns, stir fry n follow by fried bean curd.
Add bee hoon and keep stirring till the premix paste spread evenly. Add a pinch of salt to taste follow by bean sprouts and chinese chives. Keep stirring until bee hoon n bean sprouts are cooked. Add a little salt n sugar to your own taste.
Serve on a plate and garnish with omelette strips and lime.
