Chicken Wings with Sambal Tomato by Jessie Koey

Ingredients

12 pcs mid-joint wings - washed and season with salt and turmeric powder
2 lemongrass - bruised
1 tomato - cut into cube
1 big onion - cut into rings
1 tbsp honey
salt, sugar and chicken powder
1 lime
1/2 pineapple - slice (optional)
2 tbsp oil
Ingredients to be pound coarsely
4 red chillies
4 chilli padi
5 shallots
4 garlics
1 tsp belacan powder
1 tomato

Method

1) Heat oil in a wok and deep fried chicken wings with the bruised lemongrass until golden brown. Drained and set aside.
2) Saute the pounded ingredients till aromatic and oil separate. Add the ring onion, tomato, pineapple and fried chicken. Mix evenly and add 100ml water. Season with salt, sugar, honey, chicken powder and juice of 1 lime. Stir and mix well over medium heat and when gravy thickens, off heat and serve.
