Tomato Penne by Angel Teo


Ingredients
Penne
Capsicum (sliced)
Tomatoes (chopped)
Minced garlic
White onion (chopped)
Cheddar block (grated)
Chopped parsley
Some butter

Method
1. Boil penne to al dente with salt.
2. Drain set aside.
3. Heat 2tbsp of butter, add onions, then minced garlic. Fry till fragrant.
4. Add chopped tomatoes and abit of salt.
5. As water comes out of the tomatoes, add capsicum and fry till almost cooked. Add ground black pepper and some salt to season.
6. Toss in penne, stir on low fire and mix in grated cheese and parsley. Pasta will have a creamy texture.
7. Serve with more cheddar topped over penne.

On the side, i pan fried salmon and sausages as topping.
