Ondeh Ondeh by Lucinda Lau



Ingredients
500 gms steamed sweet potatoes
120gms glutinous rice flour
20gms flour
100 - 200 ml water
150gm white grated coconut
A pinch of salt
150gms gula melaka ( cut finely)

Method: Mash the sweet potatoes and add in the glutinous rice flour and flour. Knead together, slowly, adding enough water to form a soft dough.( Purple sweet potatoes will need to add more water )
Mix the grated coconut with the salt and steam for 5 mins.
Roll 15 gms of dough into balls and fill center with gula melaka.( Do not add too much or it will leak and wet your dough) Roll into balls and cook in a pot of boiling water.
When it floats to the surface, scoop up and coat with the coconut.
