Olive Oil Pasta with mushroom by Yvonne Choo



Ingredients
• 200g Penne (boiled and soften)
• 8 table spoonful of olive oil
• 1 large clove of garlic (chopped)
• 1 piece of chicken breast (boiled and shredded)
• 6 pcs of button mushroom (cut into smaller pieces)
• Salt, black pepper and italian herbs
• Parsley for garnish

Method
1. In a large saucepan, fill 3/4 of the saucepan with water, bring water to boil then cooked the penne for about 10 to 12 minute or until soft. Drain away the water using a colander.

2. Wash and clean the chicken breast meat. In a small saucepan, fill 3/4 of the saucepan with water, bring water to boil then cooked to chicken breast for about 10 minutes till cooked. (using a fork to poke through the meat). Leave aside to cool and shred the breast meat.

3. Heat frying pan over medium heat. Add olive oil, chopped garlic, shredded chicken, mushroom and mixed vegetables. Stir fry 2 min

4. Add in the cooked penne, salt, pepper and italian herbs to taste. Stir for another 3 mins.

5. Dish on a serving plate, garnish with parsley and serve.
