Carbonara by Jane Lim


Ingredients
Pasta
Bacon, sausage and/or ham (whatever you want to clear from your fridge)
Garlic & shallot, minced
Egg yolk, beaten
Mayonnaise
Chili flakes
Grated cheese

Method
1. Cook pasta in boiling water according to package instruction. Drain it and reserve the pasta water.

2. Lightly fry the bacon (and sausage or whatever else u have in your fridge). Remove.

3. Add olive oil. Sautee the garlic and shallot.

4. Add the pasta and some pasta water.

5. Add the beaten egg yolk, mayonnaise, grated cheese & chili flakes. Stir well.

6. Add the bacon.

7. Add salt & pepper. Taste & adjust seasoning.

8. Serve with more grated cheese
