Bee hoon by Evelyn Ng

Serves 2

Ingredients

2 slabs Bee Hoon
4 pcs Prawns (medium size)
1 pc Squid (cut into rings)
Few stalks Chye Sim

2 Tbl Sesame oil
1 Tbl Groundnut oil
1 Tbl Oyster sauce
½ bowl Water
1 Tbl Minced garlic
Pepper
Salt
Fried Shallots

Cooking method
1. Soak the Bee Hoon in a bowl filled with water, fully immersed.
2. Heat up the frying pan on high heat.
3. Lower to medium heat and add sesame oil, followed by groundnut oil.
4. When sesame oil starts to emit a very nice fragrance, add the garlic and stir quickly till light brown.
5. Add the seafood and fry till almost cooked
6. Add the water and simmer for 1-2 minutes
7. Add the oyster sauce, dash of pepper. Salt is optional to suit individual taste
8. Add the bee hoon.
9. Use a pair of chopsticks to stir fry the bee hoon
10. When the water fully absorbed by the bee hoon, add in the Chye Sim. Mix well as the vegetables get cooked rather quickly.
11. Serve hot with garnishing.
