Rice cooker glutinous rice by Kitty Katherine Goh


Ingredients (serves 5-6)

500g glutinous rice (or 3.5 cup) 70g dried shrimp (soaked and drained)
10-12 mushrooms (soaked, drained and shredded)
1 chinese sausage (chopped, optional)
3.5 cups water (inclusive of water soaking the mushroom, all in 3.5 cups)
some oil
5 gloves of garlic (chopped)
(you may add dried scallop or meat but has to reduce the seasoning)

Seasonings
1 Tbsp oyster sauce
1 Tbsp light soy sauce
1 Tbsp dark soy sauce
1.5 tsp sugar
1/2 tsp salt
1 Tbsp sesame oil
some pepper

Garnishings
1 red chillies (chopped)
1 stalks green onion (chopped) some fried shallots
70g fried peanuts

Method
1 Soak the glutinous rice for at least 4 hours. Remove and drain.
2 Fry chinese sausage till fragant, remove and set aside.
3 Fry the chopped garlic, dried shrimp and mushrooms until fragrant.
4 Add in glutinous rice and seasonings and fry for a while until evenly mixed.
5 Pour the glutinous rice and chinese sausage into rice cooker, add water till rice cooker water level reaches 3.5 cups and start the rice cooker.
6 Lastly sprinkle with spring onion, peanut, red chilli and fried shallots and serve.
