Min Jiang Kueh by Jeannie Lee


Ingredients
250gm All purpose flour
1tsp yeast
1/2tsp bicarbonate of soda
1 egg
375gm water
60gm fine sugar

Method
Combined all the above ingredients and leave aside for half an hour.
Heat up pan, apply some oil on the surface of the pan.
Pour batter into the pan, depending whether you want a thin or thick texture.
once you see the side a little brown n centre bubble, pour some peanuts filling and fold half and dish up.

I used the Grounded peanuts mixed bought from supermarket. Buy those that have sugar mixed in it so you do not need to add anymore sugar to the peanuts mix.
