Fried rice by Caren Goh‎


Ingredients
- 2 cup of rice cook with lesser water
- 4 or more eggs
- Boil and peel the prawns
- spring onions
- soya sauce
-2 small pieces of rock sugar (melt in 2 tablespoons of water)
- pepper

Method
1) Add a pinch of salt to egg and mix
2) Add about 4 table spoon of oil
3) heat up the oil in wok
4) when oil is hot, add egg. (*do not stir )
5) wait a few second, quickly add in rice and give it a quick stir so as to break up the egg and mix the rice to the egg (*this is the crucial part, and hv to be quick. If some egg still very watery then do not stir the rice too much. Wait till a bit cook then stir again)
- quickly mix the egg and rice together, lower the fire to medium, add in prawns, spring onion, pepper and soya sauce. Stir to mix.
- add in some more oil if the rice appear sticking to each other.
- ready to serve
