Fried Hor Fun by Jensie Tan


Ingredients
1 kg kway teow (big slice)
Chye sim, cut into inches
Fish cake, sliced
Prawn, deshell, marinated with corn starch
Squid, sliced, marinated with corn starch
Pork fillet, sliced, marinated with corn starch
Garlic, minced
Egg
Shallots oil

Seasoning
Cooking wine
Black soya sauce
White pepper
Fish sauce


Method

Fried Kway Teow
  1. Fry garlic until fragrant.
  2. Add kway teow.
  3. Add seasoning.
  4. Stir well and set aside.

Fried Hor Fun
  1. Using some shallots oil, fry pork and chye sim with some fish sauce.
  2. Add water.
  3. Add prawns, squid and fish cakes.
  4. Season to taste.
  5. Add egg and stir lightly.
  6. Add corn starch water and mix well.
  7. Serve over hor fun.

How to make Green Chilli
10 sliced green chili with 3 tbsp sugar and soaked with white vinegar (fully submerged) for three hours.
