Braised Ee Fu Noodles by Sugar Ng


Ingredients
Ee fu noodles (2-4pcs)
Yellow chives, a handful
Dried mushrooms (soaked for 3-5hrs)
Shimeiji mushrooms, a handful
Garlic, chopped

Sauce
1 tbsp oyster sauce
1 tbsp abalone sauce
1 tsp dark soya sauce
1 tsp light soya sauce (optional)
Soaked mushrooms water, 1 bowl
Stock (if needed)
Pepper
Chinese wine
Sesame oil

Method
Blanched the noodles in hot water then icecold water, drained.
Saute the garlic till fragrant , fry the mushrooms.
Add in the noodles then the mushrooms stocks and sauces, stir and simmer awhile.
Stir with chopsticks, until the noodles achieve uniform color and sauce bit dry. Add yellow chives and stir awhile.
Drizzle wine n sesame oil cover n dish out.
