Bear cut out cookies by Nancy Kee


Ingredients
100g cake flour
60g unsalted butter, softened
50g icing sugar
1/2 tsp vanilla extract (I use vanilla bean paste)
1/2 tbsp fresh milk (optional)
Pinch of salt

Method
1) Using a spatula, cream the softened butter.
2) Add milk, salt, icing sugar & cream the mixture till well combined.
3) Add in cake flour, mix well till a soft dough is formed.
4) Wrap cookie dough using cling wrap & chill for 30min -1hour.
5) Roll out cookie dough to about 3mm thick. Cut out cookies using the bear cutter. Remove excess cookie dough.
6) Place a piece of almond nut on the bear. Using a toothpick/ satay stick, lift both left & right hand of bear towards the almond nut carefully. Give the hands a gentle press. Poke eyes & nose using satay stick.
7) Bake in a preheated oven 170*c, 15-20min. Store cookies in an airtight container when cookies are completely cooled. Viola!

TIPS:
1) Don't stinge, use good quality butter.
2) Don't use vanilla essence.
3) Besides almond nuts, you can also use other nuts such as cashews, pecans etc
4) You can use any cutter of your choice & dress the cookies with icing of your choice too. Let your creativity flow.....& have fun baking these cookies!
