Ingredients:
5-8 pieces of hei cho (chicken chips) i ordered mine from Song fishery.
2 big drumsticks (skin on)
2 big onions (peeled washed chopped into 8 pieces
1 thumb size ginger (peeled washed sliced in thin strips)
Some spring onions for garnishing
Marinate chicken parts with 2 tablespoons light soy sauce ..1 tablespoon sugar and 1 teaspoon of white pepper (at least 2hrs)
Direction:
Heat wok with 2 tablespoons of cookG oil
Add onion to fry till you smell the aroma
Add chicken parts to cook and mix well
Add ginger into the wok ..mix well
Add about 500ml of water to let it cook till chicken is cooked
Cover lid and let chicken simmer
Open lid and add 1 big tablespoonful of chu hou paste and 1 big tablespoon of sugar...stir well for 5mins
Add hei cho and a tablespoon of sesame oil nto the wok and mix well
Cover lid and let it simmer till chicken and all are well cooked
Off fire and add spring onion to garnish
