Eggs with Tomato by Joyce Ng

5 eggs, beaten
About 6 tbsp water
2 tomatoes, cut into pcs
2 tbsp tomato sauce
Salt to taste
Sugar to taste, I used sugar because I used Hunt ketchup, slightly more sour than the usual ones

Add the water into the beaten eggs and mix well. Heat a pan, add some oil and try the egg as in how you will fry a scramble egg. Dish up and set aside.

In the same pan, lightly fry the tomato. Add in tomato sauce, if you prefer it to be more moist, you may add a bit of water. Season to taste with salt and sugar(if required). Finally add in the scramble egg and mix well. Dish up and add some black pepper & parsley flakes. Done.
