Panda Butter Cookies by Joey Foo


Ingredients
226g Unsalted Butter(cold and cut into cubes)
1 Cup Granulated sugar
2 Eggs
3/4 Teaspoon Salt
1 Teaspoon Vanilla extract
4 Cups Plain Flour
3/4 Cup Corn Flour
1 tablespoon Green Tea powder/Cocoa powder

Method

1. Preheat oven to 150 degrees.

2. Cream cold cubed butter with sugar & salt till pale yellow.

3. Add in eggs and vanilla extract and mix till well blended.

4. Mix in sifted flour and corn flour and mix till dough forms. You can divide the dough to mix in colors, cocoa powder or green tea powder. I use 1 tablespoon green tea powder/cocoa powder for 1/4 of the dough.

5. U can either use cookie cutters to cut shapes or roll the dough into logs to become freezer cookies so can just slice like my tortoise cookies.

6. Bake at 150 degrees for 15 mins. I use Rowenta oven fan mode only.

Making of the Tortoise cookies

1. Just roll plain color dough into log shape.

2. Cling wrap and put in freezer so it will stay its shape when u wrap the green tea dough over it.

3. Roll the green tea dough flat and thick enough to wrap the plain dough log. I use 2(green tea):1(plain) ratio.

4. Take the plain dough log out and wrap with the green tea dough. Cling wrap and freeze again so its easier to slice.

5. After baking, you can pipe with chocolate for the lines and eyes. I just use my black food marker to draw haha.
