Crispy Black Pepper Salmon by Alice Yap


Ingredients:
400g salmon fillet, cut into thick slices

Marinade:
1 tsp salt
1/2 tsp 5-spice powder
1 tbsp ginger juice
1 egg, beaten

Seasoning A (mixed):
1 cup cornflour
1 tsp salt

Seasoning B:
1 tbsp black pepper, coarsely ground
5 cups oil for deep-frying

Method:
1. Mix salmon with marinade and season for 30 mins.
2. Heat up oil for deep-frying. Dip salmon in beaten egg and then coat with seasoning A. Deep-fry in hot oil till golden brown. Dish and drain.
3. Leave a bit of oil in the wok, put in 1 tbsp ground black pepper (ie. seasoning B), fried salmon and stir until well-coated.
4. Dish up and serve.
