Chawanmushi by Sook Lai Chin

2 eggs
3 eggs equivalent of Dashi stock
A pinch if salt
2 tsp soy sauce
1/2 tsp Sake
1/2 tsp Mirin
A piece if ham cut into bite size pieces
1-2 shiitake mushroom stock

2 pcs of Kani ( shred them)
2 tbsp of dashi stock mixed with a spoon of soya milk <I used the instant organic soya powder>
1/2 tsp soya sauce & sake
1 teaspoon of cornflour or tapioca floor mixed with a spoon of water

Mix all except cornflour, in a bowl and bring to boil in microwave once ready add in the cornflour water and stir. Put back into microwave to heat up till thicken..maybe a few seconds


In a small bowl! beat the eggs and Strain the egg mixture through a sieve. Let as much egg as you can go through the sieve.
Add the rest of the ingredients and Cover with cling wrap and put into a steamer.
Steam at medium heat for 10-15 minutes or till you see the egg wobbly but cooked -test with a chopped stick to see if it's done. If clear broth comes out when poked, then pour the thicken topping on it and serve
