Banana Muffins by Sheryl Lim


Hi friends, I follow this recipe here :

Note this is muffin recipe so taste and texture are different from normal banana cakes. It's not as moist and it's like in between of bread and cake.

Notes :
a) recipe calls for 3 large bananas. If your bananas are not large, you may want to add four instead. Sufficient banana is important to the taste.

b) you can use this link for conversion of cups to grams.

c) many reviews said they added 1 tsp of cinnamon, vanilla and nutmeg each. You may want to try. I added walnut as it goes well with banana.

d) American recipes are usually very sweet so I cut down sugar to 135g instead of 150g (3/4 cup).

e) In making muffins, do not over mix wet and dry ingredients otherwise muffins will turn out to be dry. Also, add wet into dry and not the other way around. See this blog for more information.
