160g castor sugar
4 egg yolks
1 cup mashed ripe bananas n add 1tsp of lemon juice to prevent it fr darkening
225g cake flour
2 tsp baking powder
3/4tsp bicarbonate soda
4 egg whites
1 1/2 tbsp lemon juice
1 tsp grated lemon rind
Grease ur pan. Preheat oven at 170 degrees c.
Beat butter n half the sugar till light n fluffy. Add yolks one at a time, beating well after each addition.
Add mashed bananas n beat well. Fold in sifted flour, baking powder n bicarbonate soda. Beat egg white till foamy, then add balance sugar in 2 stages n beat till stiff peak n fold into mixture. Add lemon juice n rind.
Batter is quite thick but fluffy. Pour batter into prepared cake tin n bake for 45-55 mins till cooked.
