Tapioca Kueh by Agnes Tan


Ingredient
500gram grated Tapioca
110gram sugar
60ml coconut milk
230ml water
2-3 drops of yellow Colouring
For rolling/topping
200-250gram grated coconut
A pinch of Salt

 Method
1) Mix tapioca, sugar, coconut milk, water and yellow colouring in a mixing bowl
2) Grease the tray and pour the mixture in and steam for 45min or until cooked
3) Remove and leave to cool completely
4) In the mean time, steam grated coconut with salt for 5-10min. Leave to cool completely
5) Cut the tapioca cake and coat in cooled grated coconut and serve
