Stir-fried Fish and Bell Peppers with Hoisin Sauce by Zen Yip



Ingredients:
250g fish fillets, salt and pepper, 2 tbsp of hoisin sauce, 4 tbsp of corn flour, 1 red pepper, 1 yellow pepper, toasted sesame / sesame oil, spring onions, 10g shallots, oil for frying, water.

Method:
Cut the fish into bite size and marinate with salt and pepper. Dredged each piece of fish into flour. Shake off the excess flour and deep-dried them into batches. Set aside for later use. ...
Heat up 2 tbsp of oil, sauteed shallots till fragrant, add hoisin sauce. Bring back the fish, add red and yellow bell peppers to wok and tossed together with the sauce. Add water and simmer for 5 mins. Served and drizzled with sesame oil / topped with toasted sesame seeds.

Note: Hoisin Sauce may burn easily in the wok.
