Soft pretzels (eggless) by Winnie Sia



make 12 pretzels

Ingredients:
2 cup milk
1 1/2 TBSP active dry yeast
2/3 cup light brown sugar
4 1/2 cups all-purpose flour
4 TBSP unsalted butter
1 tsp salt

Soda bath (optional):
3 cups warm water
1/3 cup baking soda

Choice of toppings:
1. Melt butter + coarse salt
2. Melt butter + cinnamon sugar
3. Shredded cheese ( add cheese and heat for 1 minute)
4. Chocolate syrup/melted chocolate + sprinkles
5. Pepperoni, sausage, etc.

Directions:
Warm milk in microwave about 1minute 30 second to reach 110°F (43°C); pour into a mixer bowl and sprinkle in the yeast. Let the yeast soften, about 2 minutes; mix in brown sugar and 2 cup flour. Dice butter and soften; stir into the mixture. Add the remaining 2 1/2 cups flour and salt. Knead the dough (I'm using the stand mixer) for about 5 minutes. Shape into a ball, place in a lightly greased bowl and cover with plastic wrap. Let rise in a room temperature until doubled in size for an hour. Deflate the dough, divide into 12 pieces. Roll and stretch each piece into a 30 inches rope. Form each rope into a pretzel shape.

Soda bath: Dissolve baking soda in warm water in a pan/bowl. Dip each pretzel in the soda solution, then arrange on the baking sheet.

AF bake: 300°F (150°C), 8 minutes
Oven bake: 450°F (230°C), 8 minutes

Once the pretzels are baked, you can brush some melted butter to give the shining look and top with your favourite toppings.

*Note: Why soda bath? It's to give the 'chemical reaction' to caramelize the pretzel and also to provide the unique taste of a pretzel. Without the baking soda bath the pretzel exterior ends up pale and taste more like bread.
