Selar Fish Sambal by Cynthia Joseph Selvarajoo



1kg selar fish (trim clean with termeric powder and lime juice and marinate with 2 tbsp chilli powder, 2 tbsp turmeric powder and 2 tbsp salt)
30 pieces dry chillies (cut, soak in hot water, remove the seeds and blend well)
2 big onions
1 big ripe tomato
1tsp ginger garlic paste
1 Serai
5 curry leaves
1 Cinamon stick
5 tbsp oil
1 tsp turmeric powder
2 tsp salt
1tsp sugar
1/2 tsp vinegar
Daun sup and slices onions for garnishing.

Method;
Firstly deep fry the marinated fishes and set aside.
Then in the wok, pour oil, followed by Cinamon stick, curry leaves, onions, Serai and tomatoes. Stir well till onions are golden brown.
Then put in the blended chillie paste followed by salt, sugar, termeric powder and vinegar. Stir till the chillie cooks. Tats abt 15 mins.
Then finally add in the fried fishes. Stir for 5 mins and garnish and serve.
