The two main ingredients are Green onion salad and Doenjang-gochujang
dipping sauce.
Ingredients and Methods (for 2 servings)
1. How to make Green onion salad: Cut 10 green onions to 2.5 inch and slice them thinly, soak in cold water for 5 mins and drain. In a separate bowl, combine 2 tbsp of soy sauce, 2 tsp of sesame seeds, 2 tsp of sesame oil, 1 tsp of sugar and 1 tbsp of hot pepper paste or flakes. Pour in to the shredded onion and mix well.
2. How to make Doenjang-gochujang dipping sauce: 2 tbsp doenjang (soybean paste), 1 chopped green onion, 1 minced garlic clove, 1 tbsp gochujang (hot pepper paste), 2 tsp sesame seeds, 2 tsp sesame oil and 1 tsp sugar, mix well together in a bowl.
3. How to cook pork belly: (I used HappyCall pan because I do not have a grill pan at home). Put little butter on the heated pan and place the pork belly on it. Cook and turn them over until both sides are crispy.
4. How to eat: Put a piece of crispy pork belly onto a piece of lettue. Add doenjang-gochujang sauce, some green onion salad and grilled garlic or onion on top. (I couldn’t find perilla leaf yesterday, so I skipped this piece). Fold the lettuce leaf over and wrap all the ingredients in it. Put the ‘package’ into your mouth in one go. Enjoy over a glass of Soju (燒酒)
