Fermented bean fish fillet 豆豉鱼片 by Lin Sipei



Ingredients:
- quarter of a whole threadfin (you may use other species, cut into 2cm by 4cm)
- half of 1 green bell pepper (cut into big cubes)
- 2 cloves of garlic (chop finely)
- 1 tsp of fermented beans (wash and soak in 1 tbsp water for min of 5 mins)
- 1 tbsp of oyster sauce
- 1 tsp of dark soya sauce
- 1 tbsp of light soya sauce
- 1 tsp of sugar
- 1 tbsp of hua diao wine
- abt 60ml of hot water

Method:
1. Marinate fish cubes with 2tbsp of light soya sauce, a few dashes of pepper, 1 tbsp of sesame oil and 2 tbsp of cornflour, for at least 30mins. Put in fridge to "set" the marinate.

2. Heat oil and deep fry fish cubes in high heat til 90% cooked. Drain and set aside.

3. Put garlic and fermented bean in 2 tbsp of oil to stirfry til garlic turns golden.

4. Add in water, oyster sauce, dark soya sauce, light soya sauce, sugar and pepper. Switch to low-medium heat. While the mixture boils, lightly mash the fermented beans.

5. Once beans been mashed, add in bell pepper and cook for abt 2 mins.

6. Add in fish cubes and lightly coat with the sauce. Cook for abt 1-2mins til fish cubes are well coated with the sauce.

7. Add in hua diao wine, cook for abt 20s.

8. Done!
