Blueberry Loaf by Fc Ng


Bread flour 300g
Honey 30g
Salt 1tsp
Instant dry yeast 4g
Greek yogurt 30g
Water 50-60g
Butter 30g
Fresh/frozen blueberries 100g
Dried Blueberries 20g
(Above blueberries use food processor process till fine)
Dried blueberries or raisins 50g

Method:
Used food processor to blend 100g fresh blueberries and 20g dried blueberries then add in to the rest of ingredients(except butter and 50g dried blueberries)to knead into dough, add in butter then knead till window pane stage, add in dried blueberries. Shape into round dough, put in a bowl n let it proof for 45min or double in size.
Take out the dough, punch out air, shape into round dough n rest for 15min. Flatten the dough into rectangle n swiss roll it, put inside 450g pullman loaf pan n final proof for bout 50min or 80% full of d loaf pan,milk wash and bake at 180ºc for bout 35-45min or nice golden brown crust, if bake with cover bake at 200ºc for bout 45min. Once out fr d oven bang d loaf pan few times then turn d loaf out on cooling rack to cool. Slice only when completely cool. Enjoy!
Note: this dough is rather sticky, best use BM to knead d dough .. keep some of d water above to add in gradually .
If wanna omit yogurt n honey, can replace with 30g sugar and 80-90g water instead.
