Red Bean Bun by Suri Aziz



Red Bean Paste:
2cups red bean (soaked min 2hr or overnight)
4cups water +2cups (standby)
1/2 cup sugar
Pandan leaves (tie a knot)
Red bean, 4 cups water and pandan boil till bean is soft mushy like, if water dries up b4 bean is soft add 1 cup and stir occasionally.
Add sugar only when bean is soft and most water has evaporated. Let it totally cool b4 wrapping w pau.


Skin:
1 1/2cup plain flour / hong kong flour/ cake flour
2 tbsp cornflour
2tbsp sugar
1 tsp baking powder
1 1/4 tsp dry yeast ( I use redman brand)
100ml warm water
2 tbsp oil
Mix all n knead till smooth. Cover and let it rest for 1hr I put on top fridge cos its warm.
Fill the pau cover and let it rest another 15min den steam for 15 min.
