1. Cut belly pork into strips (easier to cut if you freeze the pork slightly),
2. Heat a bit of oil (optional) in a pan, put in the pork and fry till slightly crispy and the pork fat is 'forced' (POK) out.
3. Add a splash of dark soy sauce, and a bit of sugar and fry till thoroughly mixed.
4. Scoop out.
5. The additional step I do is to add 1-2 tbsp of water into the pan, swirl it around bring to boil and pour it over the pork as my girl likes to have a bit of gravy for her rice.
