Peach New York cheesecake - Light @ joycakelicious

I am using 6" round removable pan

Ingredients for base:
200g digestive biscuits
80g unsalted butter (i used salted butter as that's the only available in my fridge ;( so i added 2 TBS of sugar

Ingredient for cheesecake mixture:
250g cream cheese
75g sugar
15g Corn flour
2 eggs
1/4 tsp of vanilla extract
2 tsp lemon juice
80ml milk
10 sliced canned peaches

Method:
Crush digestive biscuit into crumbs and mixed well with soft butter.
Pressed the biscuit mixture down to the base of the baking pan
Set it aside in the fridge and continue next step for cheese filling

Beat butter with cream cheese at low speed until light and smooth
Add in the eggs , corn flour and mix well .
Gradually add in vanilla extract,lemon juice & milk. Stir well in each addition.
Ensure it is blend until smooth and well combined.
Pour in the cheese mixture into the baking pan.
Bake in water bath at 160C at 45mins and lower the temp to 150C at another 15mins.

Let it cook in the oven for 1/2 hr and room temperature for another 1/2 hr before refrigerate for at least 4hrs or overnight.

Decor with any fruits of your preference =) Enjoy!
