Peach Longan Cheesecake by Suri Aziz



15cm spring form pan

250g digestives biscuit
100g butter melted
(Mix crumbed biscuit and butter packed on e bottom of pan)
Set in fridge or freezer

1 whole 250g cream cheese
1 cup whipped cream/ 1 can nestle cream
1 cup peach coarsely chopped
1/2 cup hot water w 1 tbsp gelatine
(Mix all and topped on biscuit)
I put in fridge for abt 1 hr before arranging fruits.
Leave to set min 3hr

For jelly layer (optional)
1 1/2cup syrup from canned fruit
1/2 cup water
1 1/2 tbsp gelatine
Warm up syrup n water not to boil, add gelatine n topped.
Leave to set 3hr or overnight.
