Moist n Fluffy Lemon Blueburry Muffins by Eileen Heng



Wet ingredients
125g unsalted butter ( room temp)
3/4 cup sugar

2 eggs
1/2 cup sour cream
Lemon zest from 1 lemon
1tsp vanilla extract

1 cup of fresh blueberries

Dried ingredients ( Hv to sift)
1 1/2 cup of self raising flour
1 tsp of baking soda

Method
Cream butter n sugar then add egg one at a time n mix till smooth.
Add vanilla extract n lemon zest n mix to combine
Add sour cream n mix well
Add the above wet ingredients into dry ingredients n use a spatula to fold n mix till combine. (Do not over mix)

Preheat oven @ 170°C n bake for 20 - 25 mins
