Madeleines by Sharon Yeo



Ingredients:
2/3 cup plain flour
3/4 tsp baking powder
1/2 cup sugar

zest of 1 lemon
2 eggs
2 tsp vanilla
90g butter melted

Method
Sift the dry ingredients together
Put the lemon zest, sugar & eggs into a bowl and whisk till very airy & forthy about 4-5 minutes
Beat in vanilla & continue beating for 1-2 minutes
Gently fold in the flour followed by melted butter.
Let the batter rest in the fridge overnight.
Spoon the batter into the moulds & bake for 8-9 minutes.
Makes about 24 mini madeleines
