Japanese style stir-fry pork and onion by Dewi San

Adapted from Christine's recipes: http://en.christinesrecipes.com/.../ginger-pork-fried-egg.... But I did some shortcuts & adjusted seasonings based on my family's preferences, with more sauce

Ingredients:

150 gm thin pork slices (for Shaba-shabu)
1/2 onion, sliced thin
1 clove garlic, minced
Spring onion for garnish

Seasonings:
2 Tbsp soy sauce
1 Tbsp mirin
1 tsp sake
1/2 tsp vinegar
1/2 tsp ginger oil
1 tsp sugar
1 tsp dark soy sauce (for colour)
water, approx 30ml

- Marinate pork with all seasonings except water, for 15 mins.
- Heat oil in a frying pan & sauté onion until soft. Add garlic. Stir to combine, then add pork.
- Using medium heat, stir all until almost cooked. Add water and continue to cook until sauce reduced.
- Garnish with spring roll & serve with rice.
