Indian style fried golden pomfret by Vani Pande



Wash and clean the fish and make slices in both the sides on the body at an angle.

For the spice rub:

2 table spoon coriander cumin powder
1 teaspoon turmeric powder
1 table spoon garam masala ( can find in mustafa ) mdh/Everest brand good
1 big tablespoon ginger garlic paste
1 table spoon chilie powder. In mustafa u get something called Kashmiri chili powder this is not spicy but gives a very nice red color
1 table spoon finely chopped corriander leaves
2-3 table spoons corn flour( will give a nice crunchy texture )
1 lime juice
1 table spoon fish curry powder
1/2 table spoon pepper
Salt to taste

Make a paste of the above ingredients ( not too watery- thickish ) use the lime juice as the binding agent ..

Apply generously on the fish . Inside the cuts you've made and inside the fish .. Coat evenly so that all the rub has covered the fish nicely .

Let the fish marinate in this for 1 hr so that all the spices and juices get absorbed.

When ready to eat -10 mins before

Heat oil in a wok : I deep fry the above fish but you can shallow fry also
When oil is hot put in the fish and cook one side till golden brown
Then toss and cook the other side till golden brown

To finish take fish out on a flat plate when done..put on a napkin to soak any extra oil . Chop onions finely into rings. Sprinkle " chaat masala" ( available in mustafa easily ) a little bit on the fish and squeeze half a lime.
