Baked Mayo Salmon with Dill, Capsicum, Onions & Lychee by Ele Ven



Ingredients:
Salmon Fillets
Olive Oil

1 Onion, peeled & slice
1 lemon
1 bunch of fresh dill, chopped
lychees & capsicum is optional ( I added in myself)
about 4-5 tbsp of mayonnaise
bunch of parmesan cheese
sea salt & pepper to taste

Method:
1) Zest the lemon and set aside
2) In a baking dish, spead the onions, capsicum, lychees, drizzle with olive oil and sprinkle some salt & pepper
3) Lay the some lemon slices and dill on top of the spread
4) Lay the salmon fillet on top of everything
5) In a another bowl, mix the mayonnaise, chopped dill, lemon zest, season lightly with salt & pepper (salt is optional here, depending on how salty you like it)
6) Spread the mayo mix on top of the salmon and top with parmesan cheese
7) Bake salmon in a preheated oven 180 degrees for about 20-25 mins
