Salivate Chicken (口水鸡) by Soh Bernice


Ingredients
1 whole chicken
Spring onion
Ginger
Preserved Egg (optional)
Cucumber (optional)
Roasted peanuts (optional)

Hot & Spicy Sauce (mixed tgt & side aside)
Lao Gan MA spicy chili oil
Zheng Jiang old vinegar
Sesame oil
Soya sauce
Minced garlic
Chicken Broth

Method
Clean the chicken, remove the head & feet. Cover the chicken with enough water and boiled it together with the garlic & ginger for around 15 min.
Turn off the fire, cover the lid and let the chicken stay for around 20 to 25 minutes. Transfer the chicken out and soak it with iced water. Turn over several times or until the chicken is completely cooled down. Cut chicken into pieces when it is completely cooled down. *A must to soak in iced water*
Pour the chili over the chicken and ganish it.
Ready to serve!
