Shaoxing Drunken Chicken by Alinda Lim


Ingredients

1 tbsp sesame oil
1 tbsp shredded ginger
3 chicken drumstick ( cut into small pieces)
3 black fungus( soaked n shredded)
100 ml water

Seasoning

3 tbsp hua tiao jiu
1 tbsp oyster sauce
1 tbsp light sauce
1 tsp salt
1/2 tsp sugar
3 tbsp hua tiao jiu ( add in last)

Heat up sesame oil n fried ginger until fragrant.

Add chicken, black fungus n fried till fragrant.

Add warm water, seasoning n cover lid. Simmer till gravy thicken.

Add in extra 3 tbsp hua tiao jiu. Off fire n serve immediately.
