Pearl Balls (珍珠丸子) by Michelle Heng


Ingredients
300g minced meat
100g glutinuous rice (soaked overnight & drained)
1/2 carrot (diced finely)
1 egg (beaten with a pinch of salt)
1 tbsp corn flour
2 tbsp soy sauce
A dash of sesame oil
A dash of pepper

Steps
1. Mix all ingredients (except for egg, glutinuous rice and save some carrots for garnishing) thoroughly.
2. Add 1/2 egg and mix well.
3. Scoop some meat onto hand to roll them into meatballs.
4. Coat meatballs with glutinuous rice (note if the meatball is a tad too dry, coat with remaining egg before coating the rice).
5. Garnish the meatball with carrot and steam on medium heat for 45 mins.
6. Serve hot with vinegar and julienned ginger.
