Whitebait Fritters by Michelle Heng

500g whitebaits (washed & drained)
1.5 tsp black pepper
1.5 tsp salt
3 + 1 tbsp rice flour
Oil (deep frying)

1. Mix all the ingredients thoroughly except for the 1 tbsp of rice flour & oil.
2. Just before deep frying, sprinkle the last 1 tbsp of rice flour onto the whitebaits.
3. Gently slide a tablespoonful of the whitebait mixture into the hot oil, deep fry till golden brown. Repeat till the whitebait mixture is done.
4. Drain on kitchen towel before serving hot.
