Salmon fish head curry by Jade Oh

1 Salmon Fish Head (Slice into 2 pieces)
1 Big Onion
1 Brinjal
1 Big Tomato
4 Lady fingers
100ml Fresh milk
2 tbsp Cooking oil
2 cups of Water (adjust to your liking)
3 stalks of Curry leaves
1 stalk of Lemon grass
Spice Ingredients:
6 Red chillies
4 Dried chillies
8 Shallots
2 clove of Garlic
1 stalk Lemon grass
2 slices Galangal
3 pieces Candle nut
6 pieces of Cashew nut
1 inch of Turmeric
Salt and light soya sauce (1 tsp each or to taste)

1. Season the fish head with a pinch of salt
2. Blend the spice ingredients in a food processor
into a fine paste
3. Heat up 2 tbsp of oil, saute onion, spice paste,
curry leaves and lemon grass stalk until fragrant. Add water, tomato and
brinjal and let it cook for 10 mins. Then add in fresh milk
4. Once the curry has boiled. Ad the fish head and
cook for 10-15 mins or until cooked. Now add in salt and soya sauce.
5. Cut the lady finger and steam for 4 mins then
add into the curry
