Battered Prawns by Lena Lai


Batter recipe:1/2 cup all purpose flour
1/4 cup corn flour
1/4 cup rice flour
1 tsp baking powder

Add some water to make a thick batter, add salt, sugar n pepper. Rest it in the fridge for half an hour. Dip prawns n deep fry. It is so crunchy n the kids were forced to admit tat my prawns crunchiness is better than their grandma's, something they hardly agreed to admit. Even hubs said the same. I believe the thickness of batter play a role besides the flour mixture. Batter is lighter than pancake. I deep fried n put aside. Then AF a little when I wanted to serve them. Left them out for abt 20 mins, still crunchy.
