Pan fried Cod Fish, Hkg style by Teresa Theng

1st I fried the ginger till its brown (or garlic if u like)

Next I pan fried the steak with the ginger oil (don use a lot cos there's oil in the skin). Get a good non stick pan.

Once fish is well cooked, I place on serving plate. Add a bit of water to deglace the pan (be very careful, it'll splatter!). Don use too much water or it'll dilute the flavours.

Add sugar and light soy. (To taste)
Finish with Chinese wine and a little sesame oil.

Finish with garlic or shallots and ginger which ever u like, cilantro and spring onion. Bon appetite
