Made Beer Steamed Prawns by Michelle Heng

Ingredients (serves 3) 15 large tiger prawns 10 pcs ginger slices (or enough to line plate) 1 can beer (use light tasting beer) 1 tbsp wolfberries (soaked) 1 tsp salt 2 tbsp corn flour Steps 1. Trim and devein prawns by making a small incision at the back (tail end) of the prawn and use a tooth pick to locate and pull out the veins. 2. Soak deveined prawns in a bowl of water with 1 tsp salt for about 10 mins, thereafter rinse with corn flour slurry. 3. Line sliced ginger in a steaming plate and arrange prawns on top of ginger. 4. Pour beer to submerge the prawns partially and sprinkle the wolfberries on prawns. 5. Steam prawns at high heat for about 4 minutes, or until the prawns turned fully orange, careful not to over-cook. 6. Bon appetit! Note 1. Can use fruit beer for a fruity aftertaste dish!
