Dark soy sauce drumsticks by Christine Tan NonyaKueh


Ingredients:
4 big drumsticks
3 tablespoonful of Tai Hua brand light soy sauce
4 tablespoonful of premium dark soy sauce (Tai Hua Brand)
1 teaspoon white pepper
3 tablespoonful sugar (u can adjust the sweetness to your liking)
2 tablespoons Sesame oil
1 tablespoon honey

Mix sugar..honey..dark and light soy sauce..white pepper
Marinate drumsticks with the above mixture for at least 1 hour (in between 15mins..flip the thighs to let them absorb the sauce better)

Heat wok with 2 tablespoonful cooking oil
Add only chicken to fry for 10mins (skin Up)
As for the leftover marinated sauce..set aside.
Add 1 bowl of water into the wok (approx 300ml)
Cover lid and let it cook for 10mins
Open wok and pour the rest of the marinated sauce into the wok and stir well.
Add sesame oil and mix well
Cover lid and let it cook high fire for 30mins
Open lid again and u will see the gravy turned thicker and slightly sticky
Now flip the thighs and add another 200ml of water and let it simmer till you are left with about half bowl of gravy
I took about 35mins more with medium high heat
Off fire and serve with plain rice
